Tapa of Seared Ahi and Wasabi Mayo

This is a great recipe to pair with Albarino, it's easy to do in advance and it's assembled in minutes! It's light and crispy and the seared ahi with the dab of wasabi mayonnaise is delicious! If you can't find wanton rounds just use wanton wraps and cut them to size!

Ingredients
  • 1 package of fresh wanton rounds
  • 1 filet of Ahi Tuna
  • 1 package of spicy sprouts
  • Wasabi Mayonnaise (Trader Joe’s) or make your own version
  • Sesame Seeds (toasted)
  • Grapeseed Oil or Olive Oil
Instructions
  1. Fry wanton rounds in the grapeseed oil and let drain.
  2. Sear the Ahi Tuna over medium high heat on a non-stick pan about 1 minute each side (keep the inside pink).
  3. Cut into thin slices.
  4. Assemble on the wanton by spreading a small amount of Wasabi mayo, a mound of sprouts, one or two slices of Ahi Tuna and a dollop of Wasabi mayonnaise.
  5. Sprinkle with toasted sesame seeds and black sea salt (optional).
Notes
I like to use grapeseed oil for fying these wanton rounds because it has a much higher smoke point (420F) versus Olive oil (380F). It's also very light and helps keeps the wantons light and crispy.
