Trencadis Goat Cheese Balls

These goat cheese balls are called "Trencadis" because they look like a mosaic with the spots color from the parsley, pecan and dried cherry. They are bite sized and delicious. You can make this into a salad by tossing them on top of a bed of mixed baby greens. Pair with our Winemaker's Trencadis Red Blend, Graciano or Garnacha.

Serves: 12-14 balls
Ingredients
  • 8 oz package plain goat cheese
  • ⅔ cup toasted pecans (chopped)
  • ⅔ cup dried cherries (chopped)
  • ½ cup fresh parsely (chopped)
Instructions
  1. Mix the pecans, dried cherries and parsley in a bowl.
  2. Make all the the goat cheese balls first. (bite sized-about 1 Tbsp)
  3. Roll the goat cheese balls in the dried fruit & nut mixture.
  4. Let chill before serving!
Notes
Use leftover cherry/pecan mixture in a salad.
