Rosemary Manchego Bites with Olive Tapenade

Ingredients
  • Rosemary Manchego (can substitute regular Manchego or Cinco Lanzas)
  • Pitted Kalamata Olives (chopped)
  • Pitted Green Olives of your choice (chopped)
  • Chopped sundried tomatoes (optional)
  • Olive Oil
  • Fresh Rosemary (for garnish)
  • Salt and Pepper to taste
  • Optional: Minced garlic & lemon juice, dijon mustard (add to taste)
Instructions
  1. Dice Manchego into small pieces.
  2. Make the olive tapenade and mix with the cheese.
  3. Serve onto appetizer spoons.
  4. Garnish with fresh rosemary.
Notes
If you're short on time, mix the cheese with your favorite pre-made olive tapenade!
