Rosemary Manchego Bites with Olive Tapenade

Serves: 8-12
- Rosemary Manchego (can substitute regular Manchego or Cinco Lanzas)
- Pitted Kalamata Olives (chopped)
- Pitted Green Olives of your choice (chopped)
- Chopped sundried tomatoes (optional)
- Olive Oil
- Fresh Rosemary (for garnish)
- Salt and Pepper to taste
- Optional: Minced garlic & lemon juice, dijon mustard (add to taste)
- Dice Manchego into small pieces.
- Make the olive tapenade and mix with the cheese.
- Serve onto appetizer spoons.
- Garnish with fresh rosemary.
If you're short on time, mix the cheese with your favorite pre-made olive tapenade!
