Manchego & Membrillo Triangles

Recipe: Triangulos Napolitano de Manchego & Membrillo

Summary: This makes a beautiful appetizer or even dessert! Serve with Garnacha Blanca as an appetizer or with Graciano for after dinner.

Ingredients

  • Manchego Cheese
  • Membrillo (Quince Paste)
  • Slice Almonds

Instructions

  1. Toast the sliced almonds.
  2. Cut the rind off the Manchego. Tilt to the side and cut into triangles. Recut each triangle again into a smaller triangle.
  3. Make triangle shaped Napoleons by smearing one piece of cheese with membrillo and repeating with another layer of cheese and membrillo. Press firmly so that they stick together.
  4. Top each triangle shaped Napoleon with the toasted almonds.
