Mom’s Feta Mousse

Recipe: Feta Mousse

Ingredients

  • 6 oz feta cheese, crumbled – (1 1/2 cups)
  • 1/2 cup heavy cream
  • 3/4 teaspoon unflavored gelatin, softened in 1 1/2 tablespoons water

Instructions

  1. Combine crumbled feta and cream in saucepan and heat until most of the feta is melted.
  2. Stir in softened and transfer to blender. (I just use that little hand held one.)
  3. Puree until fairly smooth and add white pepper to taste.
  4. Pour into a shallow bowl and chill until set – about an hour.
  5. Before serving, bring to room temperature and beat it until soft and fluffy.

Serving Idea:
Serve with fresh vegetables such as colorful tomatoes, red onion, red & yellow & orange peppers, zucchini and kalamata olives with oregano. Drizzle with olive oil and sprinkle with salt and black pepper.
