Angie’s Pineapple, Kumquat & Date Skewers

Recipe: Angie’s Pineapple, Kumquat & Date Skewers

Ingredients

  • Fresh Pineapple
  • Dates
  • Kumquats
  • Lemon Mint
  • Pink Peppercorns
  • Date Syrup
  • Bamboo Skewer

Instructions

  1. Cut up pineapple into bite sized chunks.
  2. Pit and cut dates into quarters.
  3. Cut kumquats in half. (can substitute orange rind if out of season)
  4. Wash and dry mint leaves. Tear in half if too large.
  5. Assemble the skewers with pineapple first, then mint leaf, kumquat and date.
  6. Grind pink peppercorns lightly over skewers for color.
  7. Serve upright on a small amount of date syrup for dipping

Quick Notes

This would make a delightful salad served on individual butterleaf lettuce cups. Try pairing it with our chilled Rosado or Garnacha Blanca. Even try it with our Bokisch Sangria!

Variations

You can subsitute a balsamic syrup if date syrup is hard to find.
