Chilled Prawns with Romesco

Chilled Prawns with Romesco

Prep time:  5 mins

Cook time:  10 mins

Total time:  15 mins

Serves: 6-12

I love Spanish Romesco sauce and any time I get an excuse to enjoy it! This easy recipe is perfect for the summer or for a cocktail party with friends. Serve with Bokisch Albarino, Verdejo or Garnacha Blanca!
Ingredients
  • Prawns
  • Romesco Sauce (recipe separate)

Instructions
  1. Steam the prawns until tender. Put into a bowl with ice and water to chill.
  2. Let drain and pat dry.
  3. Serve with Romesco sauce.
Notes
You can shortcut the cooking by getting frozen bag of pre-cooked and shelled prawns. Just let defrost in water or in the fridge and voila!

You can also choose to grill the prawns instead. It's up to you!
