Mini Bell Pepper Boats w/ Blue Cheese and Sugared Walnuts

Prep time:  20 mins

Total time:  20 mins

Ingredients
  • Mini Bell Peppers
  • Blue Cheese
  • Cream Cheese
  • Candied Walnut Halves
Instructions
  1. Slowly toast walnuts in 1 Tablespoon melted butter in heavy frying pan. Sprinkle with 1 Tablespoon of sugar. Set aside to cool.
  2. Rinse, seed and cut the mini bell peppers in half to make “boats.”
  3. Mix blue cheese with cream cheese. Add more or less blue cheese to meet your taste preference. I prefer it a little stronger.
  4. Stuff the mini bells with the blue cheese mixture and top with a candied walnut.
