Cheesy Grilled Mozzarella & Mushroom Skewers

Cheesy Grilled Mozzarella & Mushroom Skewers
Ingredients
  • 1 Shallot (minced)
  • 1 Garlic Clove (minced)
  • 1 Tbsp Minced Rosemary
  • ¼ cup Olive Oil
  • 2 Tbsp Balsamic
  • Fresh Mozzarella Balls
  • Mushrooms (Baby Portabella, Crimini or Shitake)
  • French Baguette
  • Basil Leaves
  • Pimentón Dulce (Sweet Spanish Paprika)
  • Sea Salt
  • Bamboo Skewers
Instructions
  1. Prepare Vinaigrette: Whisk first 5 ingredients. Season with Salt.
  2. Cut Mozzarella Balls into 4 quarters. Roll in Pimentón Dulce.
  3. Cut Baguette into bite sized chunks.
  4. Skewer bread, Mozzarella piece, mushroom, basil leaf and end with bread
  5. Baste with Vinaigrette and Grill over medium heat.
Notes
This can be turned into a delicious dinner by adding zuchinni and red bell pepper onto the skewer!

Roll the Mozzarella in the Smoked Paprika

Skewer Together with Bread on Both Ends

 

Grill until Cheesy!
